Baked/Broiled Chicken with Smashed Sweet Potatoes and Green Beans

Hi, my name is Cameron Durham and I’m honored that Rhianna and Luke asked me to write a recipe on their blog. I have been running my own catering business, Curtesse Catering, for the past two years which specializes in milk and gluten free dishes. I love to make meals that are imaginative as well as delicious. I love the challenge to make food that one would typically think is not milk or gluten free-such as cheesy bacon fries or chicken and waffles (both of which I have made dairy and gluten free). Even though cooking is my passion, I do have a full-time job so I know the stress and struggles to make a healthy meal for the family with little time. Most of my meals take no more than 45 minutes to an hour to prepare without interruption, which is hard if you have kids or have to do chores around the house or both! I hope you will enjoy this dish I chose to make.


  • One whole chicken
  • 4 large sweet potatoes
  • One pack of green beans fresh or frozen (I use frozen for this recipe)
  • 5 Tbs butter (or dairy free butter)
  • 1/4 cup of agave
  • 1/2 Tbs of cinnamon
  • 1/4 Tbs of vanilla extract
  • 2 Tbs of salt, granulated onion powder, granulated garlic powder and paprika
  • 1 Tbs pepper



  1. Mix salt, onion and garlic powder, paprika and pepper together in a bowl, preferably I would use a saltshaker if you have one, and set aside
  2. Wash chicken with plain water and split chicken down the middle
  3. Sprinkle seasoning mix all over the chicken, but do not use all of it
  4. Put chicken in a pan, breast meat facing down, with foil and put in the oven at 350° for 45 minutes or until the chicken is completely cooked. Internal temp should be 165F at thickest part of thigh. (I highly suggest to cover the inside of your pan with foil as well)
  5. Once you remove the chicken out of the oven set your oven to broil (I typically move my oven rack to the highest level)
  6. Once the chicken is safe enough for you to handle drain any juice out and the pan and sprinkle a little more seasonings to both sides of your chicken
  7. Put chicken back into the oven and cook each side between 8 to 10 minutes depending on your stove. PLEASE DO NOT BURN THE CHICKEN OR YOURSELF

   Smashed Sweet Potatoes:

  1. Peel potatoes and slice potatoes. Cut into half moon shapes
  2. Boil potatoes until soft
  3. When the potatoes are done drain them and place back into the pot and add the cinnamon, vanilla extract, agave and 4 Tbs of butter
  4. Mix with a wooden spoon (The potatoes should be chunky not smooth)

   Green Beans:

  1. Take frozen beans out of pack and put in pot of hot water and set aside
  2. Once the beans are on thawed drain the water and replace with hot water and put on stove on high
  3. Cook beans until the water just begins to boil then take off stove, drain water and add remaining butter and a dash of salt and mix together


My family enjoyed the meal. I have 3 children ages 8,5 and 4. They asked for seconds on chicken and green beans! I think the sweet potatoes were not sweet enough for them but you can always add more agave if you or your kids prefer more as well as any of the seasonings.
