Zucchini Pasta With Meat Sauce

Hello everyone! I hope you are all doing well. This is a dish for people who love pasta but don’t want to utilize all their calorie and carb intake for the day in one meal. It’s a very inexpensive meal that can be stretched between two meals. My kids will be eating brown rice pasta so I’m making the zucchini pasta for me and my wife… you can say it’s a dinner for two :)

Zucchini pasta with meat sauce

Ingredients:

  • 1 can of tomato paste (18oz)
  • 3 1/2 cups of hot water
  • 1 lbs of a ground meat (I used venison)
  • 2-4 zucchinis
  • 1 green pepper (chopped)
  • 1/2 onion (chopped)
  • 2 Tbs of minced garlic
  • 1/2 cup (dry) Italian seasoning
  • 1 Tbs of salt
  • 1 Tbs of graduated garlic powder
  • 1 Tbs of granulated onion powder
  • 1/2 Tbs black pepper
  • 1 Tbs of agave nectar
  • Olive oil

Directions:

  1. Empty tomato paste in large pot. Add all the water and stir until the paste looks like a sauce. Turn the stove on to medium and add all dry ingredients including agave and garlic. Let sauce cook until the zucchini pasta is ready. Make sure that you’re stirring the sauce from time to time. If the sauce starts to pop out of the pot turn to low and cover with lid.
  2. Sauté the chopped onion and pepper in frying pan until onions are slightly brown. Use a little olive oil or cooking spray to coat the bottom of a pan. Once the onion and pepper are cooked pour into sauce and stir.
  3. Cook meat until browned then add to the sauce.
  4. Cut zucchini into pasta noodles using a spiral slicer (you can get one for a KitchenAid here). Sauté zucchini over medium heat until water starts to come out of the zucchini. Add a little salt and pepper to the zucchini. Drain excess water from the zucchini with a strainer. Once water is removed place zucchini on a serving dish.
  5. Add sauce on top of zucchini
  6. Enjoy!!!

Brown meat of your choice (I used venison) and stir into sauce.

Add sauce atop zucchini noodles and enjoy!! Note the time on the clock of 12:54. My start time was 12:15 meaning this entire recipe took less that 40 minutes.

The verdict:

The kids do not have a problem eating the pasta with meat sauce, so I would say it’s a safe meal to make.

As always if the sauce is too bland always add more spices.

There’s about 7 to 10 servings of sauce with this dish. And I would use one zucchini per adult person. There should be enough sauce for you to save for a later meal depending on how many people you’re feeding.
